With amazing fish from our local fishmongers at Southern Head Fishing Co, this month we will sail to the coast of West Africa to enjoy a four-course feast with wine to match.
In Eastbourne, we live on the coast and yet many of us don’t enjoy fish as much as we should. I hope to change that by hosting regular fish feasts where I will serve a variety of fish and seafood dishes cooked in the style of many cuisines from Moroccan, French to Thai.

Pumpkin Fish Cakes with pepper sauce
Plantain and prawn pepper soup cooked with West African aromatics such as selim peppers and calabash nutmeg
Baked salmon with green pepper & pea purée and coconut quinoa
Poached clementines in 'Zobo' hibiscus flowers and ginger
