Event Information

Takeaway stuffed aubergine with a side of coconut infused curry dhal. You must be able to pick this up from my home in Darwen. Pay online via wefifo so no money changes hands and you don't have to touch a card terminal. I'll be watching out for you so when you get here either park in front of the house or on the drive, stay in your car and I will come out and put the pre packed food on the back seat or in the boot or knock on the door, don't come out if you have any Covid19 symptoms.

This is an Ottolenghi classic. The coconut dal is a great recipe in its own right and even more perfect with paneer-stuffed aubergine, (paneer is a bit like ricotta cheese)

For a vegan option, I can use tofu instead.
