I'm taking the humble sweet potato and roasting it till it's soft and silky and then loading it with some roasted chickpeas that have been seasoned with cinnamon, cumin and garlic, scattering some sun kissed tomatoes, then giving them a good drizzle of avocado guacamole, sprinkled with sliced spring onions and nigella seeds and drops of basil infused olive oil to be a bit fancy pants.

Eat it as it is or get home and add a salad, rice or some of your favourtie bread.
