If, like me, you are always watching your weight come and try out some new recipes that are low fat/low calorie and healthy. Enjoy eating out without feeling guilty or worrying about what you can and can't have ... you can have it all !!! I will even give you the recipes of any dishes that you like so that you can make them at home.
Muhammara - this red pepper dip originates from Syria. Red peppers are gently roasted in the oven and then flavoured with cumin, garlic and chilles.
Tortilla - this classic Spanish dish is heaven on a plate. Quite simply eggs, potatoes and some sweet Spanish onion
Home made houmous - As you know shop bought houmous has tahini and oil in it this is an adapted recipe that is syn free.
Now for the main courses.
Cauliflower with saffron, – I love cauliflower and it is always a challenge to find a recipe that puts a bit of glamour in to what can be a dull, white vegetable. The Saffron not only gives this dish a bit of pizzazz but turns the cauliflower golden yellow.
Citrus Spiced Salmon - I wasn’t convinced about this dish at first as I thought that the spices might hide the delicate salmon flavour but it does work. Sumac, lime powder, cumin, cinnamon, orange and lime zest are gently rubbed in to the salmon and left overnight before they are roasted in the oven.
Roast butternut squash with sweet corn salsa – on average a corn on the cob has 800 kernels, all lined up in 16 neat rows. You get a lovely crunch from the corn in contrast to the sweet softness of butternut squash. Chilli, lime, coriander, mint, make every mouth full of this dish a unique taste sensation.
and there is more ....Not one but two desserts
Cardamom and vanilla pannacotta - really easy to make and should be very wobbly ....
Poached pears - these pears are gently poached in a bath of cinnamon, star anise, cloves and nutmeg - Christmas on a plate.
Freshly ground Brazilian coffee served Yorkshire tea, mint tea, green tea, liquorice tea, pomegranate and apple tea and decaf coffee if anyone wants one.
