Marinated Feta Cheese – this has become a firm favourite and is deliciously simple to make. The cheese is marinated for 24 hours with olive oil, garlic, lemon, sea salt, red onion, chillies and coriander - throw caution to the wind and just dive in with your bread and scoop up the chunks of cheese.
Yogurt, cucumber and mint dip served with plump golden raisins, warm walnuts and sprinkled with pomegranate seeds.
Tomato Salad with Pomegranate Molasses - This simple Turkish tomato dish is transformed with a drizzle of pomegranate molasses. It really doesn’t look like anything special but it is a winner every time. Tomatoes, peppers and onions drizzled with olive oil, sumac and pomegranate molasses.
Chickpea Salad - the secret is in the dressing - garlic, chilli, lemon, olive oil, mint and coriander - just feel the sunshine.

Now for the hot stuff
Cauliflower with saffron, pinenuts and raisins – I love cauliflower and it is always a challenge to find a recipe that puts a bit of glamour in to what can be a dull, white vegetable. The Saffron not only gives this dish a bit of pizzazz but turns the cauliflower golden yellow.
Citrus Spiced Salmon - I wasn’t convinced about this dish at first as I thought that the spices might hide the delicate salmon flavour but it does work. Sumac, lime powder, cumin, cinnamon, orange and lime zest are gently rubbed in to the salmon and left overnight.
Migas de Extremadura - Migas means breadcrumbs in Spanish but then that really doesn’t do this magical dish justice to just call it breadcrumbs. The bread is sprinkled with salted water left for 2 hours and then lightly baked in olive oil and then flavoured with Serrano ham, garlic, chillies and sea salt.
Spicy Moorish pork fillet - cumin, fennel, garlic, chilli, and oak smoked paprika are rubbed into pork fillet and then left to marinate overnight allowing the pork to be infused with the heady mix of spices. The pork is then roasted before serving.
And finally …..
Eton mess meets raspberry mousse …. Fresh Scottish raspberries, crunchy meringue, whipped cream and raspberry mousse all layered with hidden chocolate coated raspberries waiting to be discovered
Warm, straight out of the oven teeny weeny little Eccles cakes – I bet you can’t just have one!!
If you have room there is a selection of foreign and local cheese some hard, some soft - so soft they are practically gooey served with grapes, walnuts, figs, biscuits and homemade chilli tomato chutney (made by Ginny). Let me know if you would like some.
Freshly ground Brazilian coffee served with a variety of after dinner mints. Our variety of liqueur coffees knows no bounds. We have whiskey, both Irish and Scottish, Brandy, Tia Maria, Baileys, Tequila, Rum, Amaretto; you name it we’ve got it !!! There is also Yorkshire tea, mint tea, green tea, liquorice tea, pomegranate and apple tea and decaf coffee if anyone wants one.
