This month’s supper club features a special guest chef, Mark Camilleri. Mark and I met in Adelaide, where we were both doing our MAs in gastronomy. Since then we’ve kept in touch and meet up every year or so to discover new food. Mark is recently back from a two-week trip to Vietnam (unfortunately this time I couldn’t join him).
While not travelling, Mark is a private chef providing home-cooking services and private dining in Malta.
Asian food has always held a special place in Mark’s repertoire. “Vietnam is an amazingly beautiful country, the people are magnificent and the food, especially roadside eateries are over-the-top delicious. The food is light, fresh and vibrant. Is it well-balanced and is based around a few base ingredients and proteins“.
The menu is based on the few dishes that left an impact on Mark. He tried to stay as true as he possibly could-- hopefully, you can imagine that you are sitting on a stool, looking out at the horizon, feeling the warmth and pleasant humidity Vietnam has to offer.
