COURSE DESCRIPTION
The class will be run be one of our expert charcutiers and will be accompanied by some great Tempus salami to enjoy with a beer or two
Bacon and Sausage Making – the handmade breakfast
Evening Course
18:45: Welcome coffee and discussion on pigs and casings
19:00: Saddle butchery for bacon and sausage
20:00: Spice mixing and salting – EQ method – weighing out cures and curing bacon
20:30: Stuffing sausage and linking
21:00: Drinks and salami
