Chez Cartier in Cognac country has established an excellent reputation for dynamic and educational workshops with celebrity chef Reza Mahammad.
Reza teaches a three course menu, conveying his passion and encyclopaedic knowledge for Indian food, delivered with his trademark flamboyance and enthusiasm.
Courses are limited to 8 people to ensure individual attention. Participants create a delicious, authentic menu with Reza's guidance and enjoy the fruits of their labours for lunch, served with wine in Reza's home and former Cognac distillery.
Menu changes depending on seasonally available produce. Representative sample here:
Lentil soup with Yoghurt and chilli fried onions
Chicken in pickling spices
Oven roasted saffron cauliflower
Rice cooked with peas and cumin
Poached pairs with honey mascarpone Mousse and oat crumble

Reza is a brilliant host, so knowledgeable about everything, not just food! He kept the conversations going and made it a very lively evening indeed. He even divulged his recipes and cooking tips. He was very welcoming and friendly.

As well as being a skilled cook, the host was extremely knowledgeable about the origins of the dishes and even provided cooking tips when I sneaked into the kitchen to watch the prep.
