COURSE DESCRIPTION
The class is run by our Head of Production and co-founder Tom Whitaker and will be accompanied by some great Tempus salami to enjoy with a beer or two.
The Pig Workshop Schedule
Day Course
10.00 AM: Welcome and coffee, Tempus Bacon Sandwiches and site tour
10.30 AM: Whole pig butchery – anatomy, cuts and primary and secondary breakdown – includes saddle butchery.
12.45 PM: Lunch of charcuterie platters, freshly baked bread and seasonal salads
1.30 PM: Completion of pig butchery, grinding of cuts for sausage, discussion on spice mixing and salting
3.30 PM: Stuffing sausage and tying
4.00 PM: closing drinks and casing demonstration and Q&A session
